The movie is based on a theatrical play of the same name written by Samuel D. Hunter. Hunter also wrote the screenplay for the film adaptation.

Thus, dieting changes the point at which the Human body stores food as fat for future use, causing more of the food to become fat than be consumed for present use. Thus, Charlie going on radical diets in the early phases of his obesity would have made the problem worse, not better.
It is extremely likely that Charlie suffers from a medical problem that has made, and makes it, more difficult for him to lose weight. Ironically, diabetes, a condition often blamed on obesity, makes it harder to lose weight (not to mention the balance of evidence is tipping heavily in favour of all forms of diabetes being autoimmune disorders). Many medications used to treat psychiatric disorders can accelerate weight gain. Lack of sleep can cause weight gain. There are illnesses such as Cushing's Disease that cause weight gain. Because of American healthcare and America's Social Determinants Of Health (SDOH, look it up), determining the exact cause of Charlie's obesity would be an expensive endeavour, costing more than the money he tells his daughter he has saved up.
Regardless of what has caused Charlie's obesity, it would take intense, prolonged, and expensive medical intervention to save his life. Whilst all deaths are inevitable, Charlie is one of the few people on Earth that a doctor can tell "you will probably die tomorrow".
