There's merely a + for a new note, a garbage can, an option for emojis, and the settings gear only shows options for color and zoom.

I can't find any mention on the Github about how to enable the "scribble mode". Why?

Hi!
Right-click the app icon in the dock or application grid
There should be a context menu with a "preferences" option, affecting all notes
It opens a small window with toggles

Alternatively you can Ctrl + H to toggle it (have two notes open, as it hides the content of notes when they are unfocused)
