It feels like so much of the infrastructure to enable bridging between LiveKit deployments is almost there. Here's the idea:
(Given LiveKit A and LiveKit B)

  1. On A, create Ingress config for a given room on B.
  2. On B, create an Egress config for the given room using the Ingress config details from A.

Preferably this would be done via WHIP.

Just a thought.
