The write permission is granted to the workflow to execute `gh release`. Signed-off-by: acikgozb <acikgozb@proton.me>
This is done to prevent expanding empty `sha_opts` for Linux, which causes an error and disrupts the flow due to `set -u`. Signed-off-by: acikgozb <acikgozb@proton.me>

This PR adds the missing permission to the workflow for
gh release create.Along with this change, it also fixes the checksum generation for Linux by separating the function based on given OS.
