[SPARK] Fix test illustrating streaming issues with Unity Catalog

* The existing test for Spark Structured Streaming did not fully cover the issues described in unitycatalog#715.
* I've updated the test to include a setting that publishes the schema to Unity Catalog, ensuring it is not empty when read.
* The test remains ignored until the project adopts Delta with the changes from delta-io/delta#4550.
