This PR fixes build errors on newer versions of CMake. Since version 3.10 was released in 2018, it makes sense to update to the min version.

$ cmake --version
cmake version 4.0.1

$ mkdir -p build && cd build
$ cmake ..

  Update the VERSION argument <min> value. Or, use the <min>...<max> syntax
  to tell CMake that the project requires at least <min> but has been updated
  to work with policies introduced by <max> or earlier.

  Or, add -DCMAKE_POLICY_VERSION_MINIMUM=3.5 to try configuring anyway.

We generally use oldest supported Ubuntu as a landmark for CMake version. Ubuntu 20.04 currently ships CMake 3.16, so bumping to 3.10 is perfectly fine with me.

Thanks for the quick reply, I'll update the dependency here (zyantific/zydis#569) now and we'll continue the same in the main repository.
