Is there any documentation on how to use this library to communicate with ZigBee devices anywhere? I haven't managed to find anything.

There's none. But check through the issues and discussion, there were some pointers left.
Other than that, the only options is to dig through home assistant zha integration sources and/or zigpy/bellows cli portion of the bellows python package

You might for reference also want to look at the code of the Zigbee Plugin for Domoticz, and the Zigbee Plugin for Jeedom (competing open-source home automation software) are all using zigpy libraries as dependencies without the main zigpy library:

PS: To get to code of Zigbee Plugin for Jeedom you need to buy and install that plugin (which once installed will give you access to their Phyton code) as they do not distribute the plugin code directly via a Git repository.

@zoic21 will source code for your new zigpy based "plugin-zigbee (beta?)" for Jeedom be open source and available in public repo?

Thinking that a plugin like that might be more modular than HA and as such have source code that could be easier to dig into?
